From Scarbolo’s surrounding vineyard, the grapes are harvested, co-pressed, and co-fermented, starting in stainless steel before moving to large oak casks, resting 12 months on fine lees with a further 4 months in bottle.
The wine is complex, long, and racy, with Chardonnay providing the base, Sauvignon the lift, and Tocai the playful flourish, including hints of botrytised fruit. Classy yet provocatively different, it’s a special glassful. Perfect simply with breadsticks or as a stand-alone treat.
