This Welsh sparkling from Monmouthshire's Ancre Hill was fermented in barrels, concrete egg and stainless steel with an elevage of over 12 months for the base wine, spending typically two-three years on lees. On the nose, there's soft notes of lightly toasted brioche and hints of beeswax; on the palate, citrus peel and a refreshing finish.
