Il Penfolds Bin 389 Cabernet Shiraz 2020 è uno dei vini iconici dell’australiana Penfolds, spesso definito “Baby Grange” per la sua qualità straordinaria e il suo stile robusto. Prodotto nella regione di South Australia, questo vino è un blend di Cabernet Sauvignon (51%) e Shiraz (49%), proveniente da vigneti prestigiosi di Barossa Valley, McLaren Vale, Coonawarra e Wrattonbully. Penfolds, fondata nel 1844, è celebre per la sua capacità di combinare tradizione e innovazione, e il Bin 389 rappresenta un’espressione emblematica di questa filosofia.Le uve, raccolte a mano, sono vinificate separatamente e il vino matura per 12 mesi in botti di rovere americano (25% nuove), donandogli struttura e complessità. Di colore rosso rubino intenso, il Bin 389 2020 si apre al naso con un bouquet ricco di mora, cassis e prugna matura, intrecciato a note di cioccolato fondente, vaniglia e spezie tostate, con un tocco di eucalipto. In bocca, è potente ma equilibrato, con tannini morbidi, un frutto succoso e una freschezza sorprendente, grazie all’ottima acidità. Il finale è lungo, con sfumature di liquirizia e rovere ben integrate.
